Job Overview

As the Food and Beverage Manager, you will be responsible for overseeing the daily operations of the bar, maintaining high service standards, and developing an innovative cocktail and beverage menu that aligns with the venue’s vibe. You’ll work closely with the Venue Manager and be involved in key business decisions while driving team performance and ensuring profitability.

Key Responsibilities

  • Team Leadership: Assist in leading and developing a strong FOH and BOH team, ensuring a high standard of service across all operations.
  • Customer Experience: Ensure the bar consistently delivers an exceptional customer service experience, in line with the Sea Sea Hotel brand.
  • Menu Development: Elevate and develop the cocktail and spirits program, incorporating seasonal and local ingredients into creative menu offerings.
  • Stock & Inventory: Perform monthly stock takes on all beverage items, manage inventory levels, and ensure accurate reporting of findings.
  • Beverage Knowledge: Demonstrate strong knowledge of wines, spirits, and cocktails, and actively contribute to the development of the bar’s
    beverage offerings.
  • Operations Management: Ensure the bar operates within budgetary constraints, managing costs and improving efficiency.
  • Staff Roster & Training: Assist with rostering, team development, and training programs to ensure all staff are skilled and motivated to provide exceptional service.
  • Compliance: Maintain operations in compliance with all relevant legislation, including the Liquor Act, and ensure the safety and cleanliness of all bar equipment.
  • Management Collaboration: Attend weekly management meetings, provide updates on bar performance, and collaborate with the Venue Manager on events and promotions.
  • Guest Relations: Assist guests with enquiries and complaints, ensuring issues are resolved efficiently and maintaining a positive relationship
    with guests.

About You

  • Previous experience as a Bar Manager in a high-volume bar.
  • Strong leadership and team management skills.
  • Excellent customer service and communication abilities.
  • Confident knowledge of bar inventory management and ordering processes.
  • A passion for the hospitality industry and a commitment to delivering outstanding service.
  • Ability to work flexible hours, including nights, weekends, and public holidays.
  • An understanding of licensing and operating legislation, including the Liquor Act.

Job Overview

As the head chef, you will be responsible for overseeing the daily operations of the main service kitchen and room offerings for a busy 7-day breakfast, lunch and dinner operation. You’ll work closely with the Venue Manager and a consulting executive chef.

Key Responsibilities

  • Team Leadership: Assist in leading and developing a strong kitchen team and FOH team, ensuring a high standard of service across all food operations.
  • Customer Experience: Ensure the kitchen consistently delivers an exceptional food experience, in line with the Sea Sea Hotel brand.
  • Stock & Inventory: Perform monthly stock takes on all food items, manage inventory levels, and ensure accurate reporting of findings.
  • Operations Management: Ensure the kitchen operates within budgetary constraints, managing costs and improving efficiency.
  • Staff Roster & Training: Assist with rostering, team development, and training programs to ensure all staff are skilled and motivated in a safe/ welcoming working environment.
  • Compliance: Maintain operations in compliance with all relevant legislation, including food safety compliance rules, and ensure the safety and cleanliness of all kitchen equipment.
  • Management Collaboration: Attend weekly management meetings, provide updates on kitchen performance to venue manager and kitchen consultant.
  • About You
